What You’ll Need:

  • Fresh garlic bulbs
  • Olive oil
  • Small glass jars with tight-fitting lids

Instructions:

  1. Prepare the Garlic: Start with fresh garlic bulbs. Separate the cloves and peel them carefully, ensuring they remain intact.
  2. Blanch the Garlic: Blanching helps preserve garlic by deactivating enzymes that can cause it to sprout. Bring a pot of water to a boil and blanch the peeled garlic cloves for about 1-2 minutes. Quickly transfer them to a bowl of ice water to stop the cooking process.
  3. Dry Thoroughly: Pat the blanched garlic cloves dry using paper towels. Make sure they are completely dry before proceeding.
  4. Prepare the Jars: Sterilize the glass jars and lids by boiling them in water for a few minutes or washing them in hot, soapy water and drying them thoroughly.
  5. Fill the Jars: Place the dried garlic cloves into the sterilized jars, leaving some space at the top. Pour olive oil over the cloves until they are fully submerged, ensuring there are no air bubbles.
  6. Seal and Store: Seal the jars tightly with their lids. Store them in a cool, dark place, such as a pantry or cupboard, away from direct sunlight and heat.
  7. Use as Needed: Your preserved garlic will stay flavorful and ready to use for up to six months. When needed, simply remove cloves with a clean utensil, ensuring the remaining garlic remains submerged in oil.
