The Simple Joy of Homemade Cheese Using Just Milk and Lemon

  • 1 gallon of whole milk
  • 1/4 cup of lemon juice (freshly squeezed is best)


  1. Heat the Milk: Pour the gallon of whole milk into a large pot. Slowly heat it over medium heat, stirring occasionally to prevent it from scorching. You want to bring the milk to just below boiling point, around 185°F (85°C). You’ll know it’s ready when it starts to foam, but don’t let it boil.
  2. Add the Lemon Juice: Once the milk is hot, remove it from the heat. Gradually add the 1/4 cup of lemon juice while gently stirring. You should see the milk start to curdle almost immediately, separating into curds (solid) and whey (liquid).
  3. Let It Sit: Allow the mixture to sit undisturbed for about 10 minutes. This gives the acid time to fully separate the curds and whey.
  4. Strain the Curds: Line a colander with a clean cheesecloth or a thin dish towel and place it over a large bowl or sink. Carefully pour the curdled milk into the colander, letting the whey drain away. You can save the whey for other recipes if you like.
  5. Rinse and Drain: Rinse the curds under cold water to remove the lemony taste and any remaining whey. Gently squeeze the cheesecloth to remove excess water.
  6. Season and Enjoy: Transfer the cheese to a bowl. You can add a pinch of salt or any other seasonings you like at this point. Your homemade cheese is now ready to enjoy! It can be used in a variety of dishes or simply spread on a piece of fresh bread.
