Spinach Roulade: A Tasty and Healthy Appetizer

  • 4 cups fresh spinach leaves, washed and chopped
  • 4 large eggs, separated

Instructions:

  1. Prepare the Spinach Mixture:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a large skillet, wilt the chopped spinach over medium heat until it’s tender and most of the liquid has evaporated. Remove from heat and let cool.
  2. Make the Batter:
    • In a bowl, whisk together the egg yolks, Parmesan cheese, ricotta cheese, Greek yogurt, flour, baking powder, salt, pepper, garlic powder, onion powder, and nutmeg until smooth.
  3. Whip the Egg Whites:
    • In a separate clean bowl, whip the egg whites until stiff peaks form.
  4. Combine and Bake:
    • Gently fold the whipped egg whites into the spinach mixture until well combined.
    • Spread the mixture evenly onto the prepared baking sheet, smoothing the top.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and the roulade is set.
  6. Roll and Serve:
    • Remove from the oven and let it cool slightly. Carefully roll the roulade from the short end using the parchment paper as a guide. Allow it to cool completely before slicing.
  7. Presentation:
    • Slice the roulade into rounds and serve as an appetizer or light meal. Garnish with fresh herbs or a drizzle of olive oil, if desired.
